Raspberry Sherbet

A balanced raspberry sherbet with clean fruit flavor and bright citrus acidity. Tested and dialed in.

Ingredients — Serves 6

Whole milk1 cup
Heavy cream½ cup
Granulated sugar¾ cup
Amoretti raspberry extract1½ tsp

Method

Make the base
Combine milk, cream, and sugar in a saucepan over medium heat. Stir until sugar fully dissolves, about 3–4 minutes. Do not boil. Remove from heat and cool to room temperature.

Chill, churn, harden
Refrigerate until completely cold, at least 2 hours. Churn 20–25 minutes. Transfer to container, press plastic wrap onto surface, freeze at least 2 hours. Let sit 3–4 minutes before scooping.
Notes

Tested amounts: 1½ tsp extract and 1 tbsp lemon juice — dialed in from real testing.

Texture upgrade: For smoother texture, replace ¼ cup sugar with light corn syrup in a future batch.

Grapefruit Sorbet

A bright, tart grapefruit sorbet with bold citrus flavor and clean acidity.

Ingredients — Serves 6

Lemon Sorbet

A clean, balanced lemon sorbet using fresh juice, zest, and Boyajian lemon oil. First recipe in this series built with xanthan gum for proper body.

Method

Whisk xanthan gum into sugar and corn syrup thoroughly until fully combined. No clumps — this step is non-negotiable before any liquid is added.

Make the syrup
Add water to sugar mixture. Heat over medium, stirring until dissolved and clear, 3–4 minutes. Do not boil. Cool to room temperature.

Add lemon
Once cooled, stir in lemon juice, zest, Boyajian oil, and salt. Taste — the base should be quite tart and quite sweet. Both mute significantly when frozen.

Chill, churn, harden
Refrigerate at least 2 hours. Churn 20–25 minutes. Freeze at least 2 hours. Let sit 3–4 minutes before scooping.
Notes

Three-layer lemon: Juice for acidity, zest for aromatics, Boyajian oil for concentrated intensity.

Boyajian oil: Add off heat only — volatile aromatics cook off easily.

If texture not right: Nudge xanthan gum to ¼ tsp. Do not exceed ¼ tsp.

Mango Sorbet

A tropical mango sorbet using cornstarch cooked into the base for body and smoothness.

Ingredients — Serves 6

Method

Make the slurry
Whisk cornstarch into sugar until no lumps remain. Slowly add water, whisking continuously to form a smooth slurry.

Cook to a full boil
Bring to a full rolling boil over medium-high heat, stirring constantly. Hold for 30 seconds — this fully activates the starch. The mixture will thicken noticeably. Remove from heat.
03
Cool and add flavoring
Cool to room temperature, then stir in mango flavoring and salt. Taste and adjust.

Chill, churn, harden
Refrigerate at least 2 hours. Churn 20–25 minutes. Freeze at least 2 hours. Let sit 3–4 minutes before scooping.
Notes

Full boil is essential: A simmer won't fully activate the starch.

Acidity: If base tastes flat, add 1–2 tsp fresh lemon juice.

Apricot Sorbet

Canned apricots blended with their juice, boosted with Amoretti apricot flavoring. Xanthan gum goes directly into the blender for superior dispersion.

Combine canned apricots (with juice) and xanthan gum in a blender. Blend on high 1–2 minutes until completely smooth. Set aside.

Whisk cornstarch into sugar. Slowly add water, whisking to form a smooth slurry. Bring to a full rolling boil, hold 30 seconds until thickened. Cool to room temperature.

Combine and flavor

⚠️ Brand Warning

Do not use Safeway Signature canned apricots — completely tasteless and sour with no flavor. Use Oregon Fruit Products, Blenheim Brand, or Trader Joe's.

No lemon juice needed with poor quality fruit (its sourness provides acidity). With better fruit, add 1–2 tsp lemon juice.

Lychee Sorbet

Half Boiron purée for real fruit body, supplemented with Amoretti lychee flavoring for intensity. Cuts material cost in half while maintaining quality.

Pear Sorbet

A multi-source pear sorbet layering canned pears, Real Infused Exotics pear syrup, Monin pear syrup, and LorAnn extract for depth and complexity.

Ingredients — Serves 6

Method

Combine canned pears (with juice) and xanthan gum in a blender. Blend on high 1–2 minutes until completely smooth. Set aside.

Make cornstarch base
Whisk cornstarch into a small amount of water to form a smooth paste. Add remaining water, bring to a full rolling boil, hold 30 seconds. Cool to room temperature.

Combine and taste
Combine cooled base with pear purée, both syrups, lemon juice, and LorAnn extract. Taste — pear should be present and layered. Adjust LorAnn in ¼ tsp increments.

Chill, churn, harden

Notes

No added sugar: Both syrups are heavily sweetened — none needed. Add only if base tastes flat.

LorAnn dosage: ¼ oz per quart is LorAnn's recommended rate — approximately 1½ tsp for this batch.

Watermelon Lime Sorbet

Pure summer in a scoop — fresh seedless watermelon with lime. Natural deep pink color. No coloring needed.

Ingredients — Serves 6

Seedless watermelon, cubed6 cups
Xanthan gum⅛ tsp
Water½ cup
Granulated sugar¾ cup
Cornstarch1 tbsp
Fresh lime juice (~2 limes)3 tbsp
Lime zest (~1 lime)1 tsp

Method

Purée and strain
Blend watermelon with xanthan gum on high 1–2 minutes. Pass through a fine mesh strainer, pressing firmly. You should have about 2½ cups smooth juice.

Make cornstarch syrup
Whisk cornstarch into sugar. Slowly add water, whisking to form a smooth slurry. Bring to a full rolling boil, hold 30 seconds. Cool to room temperature.
03
Combine and taste
Combine cooled syrup with watermelon juice, lime juice, zest, and salt. Watermelon and lime should be bright and present. Base should taste noticeably more intense than your target — freezing mutes watermelon significantly.

Chill, churn, harden
Refrigerate at least 2 hours. Churn 20–25 minutes. Freeze at least 2 hours. Let sit 3–4 minutes before scooping.
Notes

Straining essential: Fine fibrous bits will create unpleasant graininess if not removed.

Sugar adjustment: Watermelon sweetness varies enormously — taste and adjust.

Flavor boost: If base tastes flat, a small amount of Amoretti or LorAnn watermelon flavoring can be added.

California Poppy — Apricot Nectar Version

Apricot nectar and orange blossom water — warm, golden, and floral. A preview of the flavor profile while the dried apricot version awaits better fruit.

Method

Build the base
Combine nectar, milk, cream, sugar, corn syrup, and salt in a saucepan over medium heat. Stir until sugar dissolves and mixture is steaming, 3–4 minutes. Do not boil.

Add orange blossom
Remove from heat. Let cool 5 minutes, then stir in orange blossom water and lemon juice. Taste — apricot should be clear, orange blossom a distinct supporting note.

Chill, churn, harden
Refrigerate at least 2 hours. Churn 20–25 minutes. Freeze at least 2 hours. Let sit 3–4 minutes before scooping.
Notes

Orange blossom water: Always add off heat. Start at 1½ tbsp — it's powerful. Too much turns soapy.

Sugar is reduced: Apricot nectar is already sweetened. Taste and reduce sugar to 3 tbsp if nectar is very sweet.

This is a preview batch: The dried apricot version is the target recipe. Use this to dial in orange blossom preference.

California Poppy — Dried Apricot Version

The definitive California Poppy — concentrated dried apricot purée and orange blossom water. Warm, golden, and intensely flavored. The gold standard version.

Ingredients — Serves 6

Dried apricots (California preferred)8 oz
Water (for simmering)2 cups
Whole milk½ cup
Heavy cream¼ cup
Granulated sugar⅓ cup
Light corn syrup¼ cup
Orange blossom water2 tbsp
Fresh lemon juice1 tbsp

Method

01
Simmer the apricots
Combine dried apricots and water in a saucepan. Simmer gently 20–25 minutes until completely soft. Do not drain — all that liquid is flavor.
02
Purée and strain
Transfer apricots and liquid to a blender. Blend until completely smooth, 1–2 minutes. Pass through a fine mesh strainer, pressing firmly. You should have about 1½ cups of smooth purée.
03
Build the base
Return purée to saucepan. Add milk, cream, sugar, corn syrup, and salt. Stir over medium-low heat until sugar dissolves and mixture is smooth, 3–4 minutes. Do not boil.
04
Add orange blossom
Remove from heat. Let cool 5 minutes, then stir in orange blossom water and lemon juice. Taste carefully.

Chill, churn, harden
Refrigerate at least 3 hours. Churn 20–25 minutes. Freeze at least 2 hours. Let sit 3–4 minutes before scooping.
Notes

Apricot variety matters: California dried apricots (small, dark, tart) are superior to Turkish (plump, sweet, mild). If using Turkish, add extra ½ tbsp lemon juice.

Orange blossom water: Start at 1½ tbsp, go to 2 tbsp only if you want more floral presence. Always add off heat.

Color: Deep amber-orange — gorgeous and natural. No coloring needed.

Sherbet ⚠️

Peach Sherbet

DO NOT MAKE AGAIN until a quality peach source is identified. Safeway Signature frozen peaches were completely tasteless.

⚠️ Do Not Make Again

Safeway Signature frozen peaches are completely tasteless — picked underripe, no flavor whatsoever. Required 4 oz of professional peach flavoring just to produce something edible.

Better sources: Dole, Trader Joe's, or fresh California peaches in season (June–August) frozen at home at peak ripeness.

Gelato

Mint Stracciatella Gelato

Full-batch gelato built on the Philadelphia-style base, scaled to two cups each of milk and cream. Menta bianca syrup with low-melting-point dark chocolate shattered in stracciatella-style.

Ingredients — Serves 8

Granulated sugar1½ cups
Cornstarch2 tbsp
Xanthan gum¼ tsp
Whole milk2 cups
Heavy cream2 cups
Vanilla extract2 tsp
Menta bianca syrup300g
Low-melting-point dark chocolate, chopped6 oz

Method

Combine dry ingredients
Whisk cornstarch and xanthan gum into sugar thoroughly until fully combined with no lumps.

Cook the milk base
Slowly add milk, whisking continuously. Bring to a full rolling boil over medium-high heat, hold 30 seconds until thickened. Remove from heat.
03
Add cream and mint
Cool to room temperature, then stir in cream, vanilla, and menta bianca syrup. Taste — mint should be bold and clear.
04
Chill thoroughly
Press plastic wrap onto surface. Refrigerate at least 3 hours or overnight.

Churn
Churn 20–25 minutes until thick, dense, and creamy. Stop before it becomes fluffy — gelato has lower overrun than ice cream.
06
Prepare the chocolate
Melt chocolate with grapeseed oil over a double boiler or in 20-second microwave bursts. Let cool to room temperature — pourable but not warm.

Stracciatella pour
With machine still running in the last 2 minutes, pour melted chocolate in the thinnest possible steady stream from a height. Hold the bowl high — a thread, not a pour. The cold gelato instantly shatters the chocolate into thin irregular ribbons.
08
Harden
Transfer immediately to container, press plastic wrap onto surface, freeze at least 2 hours. Let sit 3–5 minutes before scooping.
Notes

Menta bianca syrup: Add off heat always — volatile white mint aromatics cook off easily. 300g dialed in from testing.

Stracciatella technique: Machine must still be running. Pour slowly — too fast makes chunks rather than ribbons.

Xanthan gum ceiling: ¼ tsp is the maximum for this doubled batch. Do not increase.

Classic, balanced chocolate ice cream on the proven Philadelphia base. Ghirardelli Majestic Dutch-process cocoa gives deep, smooth flavor.

Intensity adjustment: ⅓ cup gives balanced result. Increase to ½ cup for darker, more intense chocolate.

Blooming option: Whisk cocoa into 2 tbsp hot water to form a paste before adding to dry ingredients — extracts more flavor from the cocoa.

Semi-Sweet Chocolate

Rich, truffle-like chocolate ice cream with pure melted semi-sweet chocolate as the sole chocolate source. Silky and intensely flavored.

Notes

Sugar is reduced: Chips are already sweetened. Nudge back up to ⅔ cup if chips skew very dark.

Hardness note: 6 oz of chocolate may freeze quite firm. Consider adding ½ shot espresso (cooled, off heat) in a future batch — deepens flavor and softens texture.

Do not add chocolate to cold liquid: Always pour hot base over chips — never the reverse.

Ice Cream

French Vanilla

Classic custard-style ice cream with 3 egg yolks — rich and golden without tipping into eggy territory. Vanilla bean paste throughout.

Ingredients — Serves 4

Egg yolks3

Method

Whisk yolks and sugar
Whisk egg yolks and sugar together until pale, thick, and slightly ribbony, about 2 minutes. Set aside.

Heat the milk
Combine milk and salt in a saucepan over medium heat. Warm until steaming and just beginning to simmer at the edges. Do not boil. Remove from heat.
03
Temper the yolks
Pour hot milk into yolk mixture in a thin steady stream, whisking constantly. Start with just a splash, whisk, then continue gradually. This prevents scrambling.
04
Cook the custard
Return mixture to saucepan over medium-low heat. Stir constantly until custard reaches 170–175°F and coats the back of a spoon, 5–8 minutes. Do not boil.
05
Strain and finish
Strain immediately through a fine mesh strainer into a clean bowl. Stir in cream and vanilla bean paste. The cold cream stops the cooking.

Chill, churn, harden
Press plastic wrap onto surface. Refrigerate at least 4 hours or overnight. Churn 20–25 minutes. Freeze at least 2 hours. Let sit 4–5 minutes before scooping.
Notes

Temperature is everything: 170–175°F is the target. Thermometer strongly recommended. Above 180°F the custard will curdle.

Straining is essential: Catches any bits of cooked egg — always strain.

Farm eggs: Dark-yolked eggs will produce a more golden color than commercial eggs — beautiful and appropriate.

Butter Pecan

A home interpretation of Häagen-Dazs butter pecan — French custard base with 2 egg yolks, coconut oil, and butter-toasted salted pecans folded in chunky after churning.

Butter-toast the pecans
Melt butter in a skillet over medium heat until foaming. Add pecans, stir constantly until golden and fragrant and butter is lightly browned, 4–5 minutes. Transfer to a plate, sprinkle with flaky salt, spread to cool completely. Do not skip cooling.

Whisk yolks and sugar
Whisk egg yolks and sugar together until pale and slightly thickened, about 2 minutes.

Heat the milk
Combine milk, corn syrup, and salt in a saucepan. Warm until steaming. Do not boil. Remove from heat.

Temper and cook
Slowly pour hot milk into yolks, whisking constantly. Return to saucepan and cook over medium-low, stirring constantly, until 170–175°F and mixture coats the back of a spoon, 5–8 minutes.

Strain and finish
Strain into a clean bowl. Whisk in cream, coconut oil, and vanilla extract. Coconut oil melts smoothly into the warm custard.

Chill and churn
Refrigerate at least 4 hours. Churn 20–25 minutes until thick and creamy.

Fold in pecans and harden
Transfer to container, folding in cooled pecans in 2–3 additions as you go. Work quickly. Press plastic wrap onto surface, freeze at least 2 hours. Let sit 4–5 minutes before scooping.
Notes

Coconut oil: Improves body and scoopability at freezer temperatures — same role it plays in the commercial product.

Flaky salt on pecans: The contrast of salt against sweet ice cream is the signature of butter pecan. Use flaky salt, not fine.

Pecan cost: The controlling cost variable — bulk buying reduces cost significantly.

Ice Cream

Coffee Ice Cream

Clean, balanced coffee ice cream on the proven Philadelphia base. Fresh espresso shots provide pure, aromatic flavor without bitterness.

Method

Combine dry ingredients
Whisk cornstarch and xanthan gum into sugar thoroughly.

Cook the milk base
Slowly add milk, whisking continuously. Bring to a full rolling boil, hold 30 seconds until thickened. Remove from heat.

Add espresso and cream
Cool base to room temperature. Pull espresso shots and allow to cool. Stir in cooled espresso, cream, vanilla, and salt. Taste — coffee should be clear and present with no harsh bitterness.

Chill, churn, harden
Refrigerate at least 2 hours. Churn 20–25 minutes. Freeze at least 2 hours. Let sit 3–4 minutes before scooping.
Notes

Milk is reduced: Espresso shots replace some milk volume — total liquid stays consistent.

Cool everything before combining: Hot espresso into warm base loses the aromatic top notes that make fresh espresso worth using.

Intensity: 3 shots is conservative — increase to 4 and reduce milk by the same volume for bolder coffee.

Coconut Ice Cream

All three coconut sources — toasted flakes blended into the base, full-fat canned coconut milk, and sweetened cream of coconut. Rich, smooth, and deeply coconut-forward.

Toast the coconut

Transfer entire mixture to a blender. Blend on high at least 2 full minutes until completely smooth and creamy. Pass through a fine mesh strainer, pressing firmly. Discard remaining solids.
